Kälte verhindert jedoch, dass sich Viren und Bakterien vermehren, so funktioniert auch die Lagerung von Lebensmitteln im Kühlschrank: „Kälte blockiert die Vermehrung von Mikroorganismen, die für die Verschlechterung von Lebensmitteln verantwortlich sind.“ Für andere Organismen ist die Kälte tödlich, weil das Wasser der Zellen, gefrierend, im Volumen wächst und die empfindliche Zellmembran bricht. Bakterien und Viren mit einem sehr hohen Innendruck haben robuste Zellwände, die auch der Volumenzunahme durch Einfrieren widerstehen.
